Ingredients
- 2 ripe bananas, mashed
- 1 cup old fashioned oats (not quick-cook)
- ¼ cup peanut butter
- ¼ cup walnut pieces
- 1 cup fresh blueberries
- ¼ cup real maple syrup
- ½ tsp. cinnamon
- 1 tsp. vanilla bean paste
- ¼ tsp. salt
Directions
- Preheat your oven to 350°F.
- In a large bowl, mash the ripe bananas until smooth.
- Stir in the oats, peanut butter, maple syrup, cinnamon, vanilla bean paste, and salt until well combined.
- Gently fold in the fresh blueberries and nuts.
- Scoop tablespoon-sized portions of the mixture onto a baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes, or until the cookies are lightly golden and firm to the touch.
- Allow them to cool on the baking sheet for a few minutes before eating.
